Who here likes breakfast? Now who here likes a good fry up? We know we do. This recipe is our take on the classic post-night-out 12 o’clock fry up. It’s a plant-based breakfast of champions, and it's delightfully easy to make. The nice thing about this recipe is that you can make it as easy or as complicated as you want. The only thing you have to ‘make’ for this recipe are the sweet potato rostis, the recipe for which we have taken from Deliciously Ella’s ‘Deliciously Ella with Friends’. For the sake of saving time- because who has any of that nowadays- we’ve bought the accompaniments from the supermarket, but you’re welcome to make from scratch if that’s your thing!

(Serves: 2 people)



  • Olive oil

  • 1 x pack of Shroom burgers, available from Planet Organic or buy online

  • Store-bought sweet pepper or tomato relish, or follow the recipe here

  • A ripe avocado, cut into thin-ish slices

  • 2 small handfuls of cherry or baby plum tomatoes, cut into halves

  • Thyme to garnish (optional, for those feeling a little fancy)

For the sweet potato rostis, recipe from Deliciously Ella’s ‘Deliciously Ella with Friends’- available on amazon:

  • 4 tablespoons olive oil

  • 1 sweet potato, peeled and grated

  • 1 red chilli, deseeded and finely chopped (if you like it less spicy, only use ½ chilli)

  • 1 tablespoon sesame seeds

  • 4 tablespoons buckwheat flour

  • salt and pepper


  1. Firstly, for Deliciously Ella’s rostis:


    In a large, non-stick lidded frying pan, heat 2 tablespoons of the oil over a high heat.
    Meanwhile, place the remaining ingredients in a bowl and mix them thoroughly.

    Spoon the sweet potato mixture into the hot oil, in 4 even mounds, making sure they’re not touching each other. Cook over a high heat for about 2 minutes, gently pressing the mixture down every now and again so that they compress into nicely shaped patties.

    Cover the pan and reduce the heat to as low as it will go. Let the steam cook the patties through for about 7 minutes.

  2. Now, while the rostis are steam cooking:


    Heat up another pan with a small amount of olive oil in it, and fry the 2 Shroom patties on a high heat for 3-4 minutes on each side. The aim here is to char the edges slightly so that they get an amazingly crispy and flavoursome coating. Once they’re done, remove the pan from the heat.


    Once the 7 minutes is up on your rostis, take the lid off. The underside of the rostis should be lovely and crispy and the patties will have reduced in size.

    Gently turn the rostis over with a spatula, then whack the heat up to high again and cook for 3 minutes until the second side is browned nicely. At the same time, fry those tomatoes in a little olive oil (we like to add a few sprigs of thyme at this stage too) until soft to touch.


  3. Grab a plate!


    It’s time to build this monster! Now you can build this however you like, heck you could even make it a monstrous double stack and eat it all for yourself! If however you prefer a little more order in your life, we’ve provided some advice on how to build:-


    Firstly, place one of the sweet potato rostis at the base of the plate, followed by a thin layer of tomato relish, then add the patty, followed by some slices of avocado and then some more relish. Pop the second rosti on top, and finish off with a little round of juicy fried tomatoes on top!

    Voila! Repeat the same way for the second stack. Garnish with a little sprinkle of salt, black pepper and thyme if you're going for the instagram shot!
