LOADED BBQ BEAN NACHOS

Nachos are a real favourite of ours. They’re so speedy and easy to make, and SO DAMN TASTY!

This recipe couldn’t be any easier and it’s just how loaded nachos should be- packed full of toppings and super messy. There’s no other way than to get stuck in and eat this with your fingers! We’ve given ours a Vurger Co. twist by adding a generous drizzle of sriracha sauce and our BBQ Bean patty on top for a tonne of protein packed flavour and spice.

Prep time: 5 minutes  | Cook Time: 10 minutes | Total time: 15 minutes

(Serves: 4 people as a side)

INGREDIENTS

  • Large bag of tortilla chips

  • 1 pack of our BBQ Bean burgers

  • 1 pot of store bought guacamole or our herby guacamole

  • 1 pot of store bought salsa

  • vegan cheese, to taste, We use the pre grated stuff!

  • 1 portion vegan nacho cheese/ queso dip (we have used the Kinda Co. one here. If you can’t find any, try subbing for a vegan sour cream or just use extra vegan cheese)

  • 1/2 jar jalapeños, chopped.

    Optional toppings:

  • spring onions, chopped

  • fresh coriander, chopped

  • raw red onion, chopped

  • sriracha, drizzled

INSTRUCTIONS

  1. Start by preheating the oven to 180 degrees. Place the tortilla chips into an ovenproof dish, then scatter the chopped jalapeños over the top. Finally, sprinkle or grate the vegan cheese liberally over the top and place in the oven for around 10 minutes, or until the cheese is melted and the chips look slightly toasted.

  2. MEANWHILE, let’s cook these patties! Place your two BBQ Bean patties into a small bowl and mash them together with a fork until they have a more mince-like consistency. Next, place the BBQ Bean mince in a non stick pan with a good glug of oil, cooking it on a medium-high heat for around 6 minutes or until it is hot all the way through. Set aside.

  3. Now that your nachos have been nicely toasted, it’s time to add the rest of the toppings!

    Sprinkle the BBQ bean mixture liberally over the top of the dish. Do the same with the guacamole, salsa and queso dip, placing them in little clusters. Now sprinkle your spring onions, red onion and coriander over the top (if you are using them that is!). Finally, give the whole thing a good old drizzle of sriracha to make things super saucy!!! We are drooling right now.

  4. Share with your friends OR keep it all for yourself!!! Sharing is overrated anyway and what better accompaniment to a Friday night Netflix marathon?! 😜
