When we’re not having the Habanero for breakfast with mango salsa and avocado, we love to have it in a burger, Mexican style! Here is our go to, super easy, throw together recipe for a delicious Mexican burger in under 15 minutes! Everything is store bought to minimise fuss, so all you have to do is cook the patty and throw everything in a bun! Yippeeee!

Prep time: 5 minutes  | Cook Time: 8 minutes | Total time: 13 minutes

(Serves: 1 person)


  • vegan brioche bun or any other vegan burger bun

  • 1 Make at Home Habanero patty

  • olive oil

  • salt and pepper

  • vegan mayo

  • salsa

  • 1-2 tbsp coconut yoghurt

  • 1 slice vegan cheese

  • a handful of rocket

  • a handful of tortilla chips

  • 1/4 jar jalapeños, chopped

  • 1/2 an avocado mashed with the juice of 1/2 a lime and salt or our herby guacamole



  1. Begin by heating up a generous glug of oil in a non stick pan on a medium-high heat. Once the oil is hot, add the Habanero patty to the pan, and cook for 3-4 minutes each side, making sure the patty is always sizzling. If not, add a little extra oil! Add a slice of vegan cheese towards the end of cooking and place a lid over the pan to give the cheese a bit of a hand with melting!   2. While the patty is cooking, toast the brioche buns by laying them face down on top of the toaster and cooking until the edges are slightly golden.

  3. Time to build!

    Slather some vegan mayo and salsa on either side of the bun, then add rocket to the bottom bun. On top of that goes the patty with cheese, followed by a tablespoon or two of coconut yoghurt and a spoonful more of the salsa. Next, add the avocado followed by the chopped jalapeños and tortilla chips. Finally, add a little more rocket and put a lid on that baby! The burger itself is super filling but if we are with friends we like to serve tortilla chips and dips alongside!
