SHROOM BURGER WITH CARAMELISED ONIONS AND HERBY GUACAMOLE
This is our favourite way to enjoy the Shroom burger right now- it’s a real showstopper! The caramelised onions and herby guacamole are just the ultimate indulgence and makes these burgers the ultimate people pleaser! If you prep the caramelised onions and guacamole ahead of time (the onions don’t need to be hot when served) then it only takes a few minutes to throw together this burger when it’s time to eat!

First things first- prep the caramelised onions!
We suggest starting with the caramelised onions and then preparing the herby guacamole while the onions are cooking as the onions take a fair while to caramelise- but we promise it’s worth it!
While the onions are cooking, get started on the herby guacamole!
Once the guacamole and the onions are ready, it’s time to put the rest of the burgers together!
Heat some oil in a non stick frying pan on a medium-high heat and once it’s hot enough, add the patties to the pan along with a sprinkle of salt and pepper. Cook the patties for 3-4 minutes each side and always ensure that they are audibly sizzling! Add a little more olive oil as you go to help with this. While the patties are cooking, it’s time to toast the buns!
You can do this in a toaster or underneath a grill- whichever you prefer.
It’s time to build!
Once your patties and buns are ready, spread a little mayonnaise on either side of the bun, followed by a little rocket on the bottom of each bun. Place the patty on top of the bed of rocket, followed by a few spoons of the guacamole and a few spoons of the caramelised onions. We like to go a little crazy with our helpings of onions and guac and the recipe we provide for each is enough for 2 very hungry people (like us) or 4 less greedy people! Finally, pop a slice of tomato on each burger and cover the stack with the top of the bun.
