SUNKISSED TOMATO AND PESTO PIZZA
WITH A more-ish SHROOM TOPPING
With a total prep time of 15 minutes, this recipe makes the perfect weeknight dinner! We love using a flatbread for a more ‘rustic’ feel and optimum crust dipping- but you are more than welcome to use a regular pizza base if you like! Pesto and sun-kissed tomatoes is one of our all-time favourite pizza combinations- add our addictive Shroom topping and we are in serious pizza heaven 😍😍😍
Prep time: 5 minutes | Cook Time: 10 minutes | Total time: 15 minutes
(Serves: 1-2 people)
1 flatbread or pizza base
1 pack of our Make at Home ‘Shroom’ patties
salt and pepper
tomato pizza or pasta sauce
1 pack sun kissed tomatoes, from the deli section
a handful of rocket
Start by preheating the oven to 200 degrees.
Empty your pack of two Shroom patties into a bowl. Mash the patties very gently with a fork- just enough so that they are chopped into smaller pieces/clusters and have an almost sausage meat like appearance.
Heat up a non stick frying pan with a good glug of oil and place the shroom mix into the pan, cooking it for around 5 minutes or until until crisp and golden. Be sure to keep gently stirring the shroom mix to ensure that it all cooks evenly.
Whilst the shroom mix is cooking, place your pizza base or flatbread on a baking sheet and begin by spreading the tomato sauce across the base, leaving about an inch or so at the edges.
Once your Shroom mix is ready, scatter it across the pizza, along with the seeds, then place it in the oven to cook for 10-15 minutes or until crisping at the edges.
Now all that’s left to do is drizzle the pesto on top along with a handful of fresh rocket! If we’re using flatbread we like to serve with some dipping sauce such as BBQ or Garlic Mayo on the side.
