Ever get cravings for some good old fashioned American-style BBQ grub? This recipe is our remedy to all your American comfort-food needs. We've combined our spicy BBQ patty with a crunchy, citrus-y slaw, a loving dollop of BBQ sauce, and the most yummy nutty sweet potato mash. The inspiration for this power-combo came from Hugh Fearnley-Whittingstall’s ‘Much More Veg’. We honestly don’t know why we ever had it the normal way except for the fact that we didn’t know this awesome combo existed in the first place. To make this as simple as possible, you can get the store-bought stuff, or for the ultimate indulgent experience you can make your own soooo easily by roasting a single layer tray of almonds with some salt in the oven at 180°C, and cooking for roughly 10 minutes, or until you can start to smell a slight nutty aroma wafting from the oven! Be careful not to let them burn! Then you just blitz them in a food processor until a creamy paste forms. We warn you though, if you are anything like us, this will NOT last long. Make spares for essential tasty snacking provisions folks.

We’ve built this recipe to be QUICKEASY and VERSATILE. You can swap ingredients in and out, depending on what you have in the fridge, and alter the quantities depending on your taste. Make it yours!

For this recipe (makes 2 bowls) you will need:-

  • 1 pack of The Vurger Co BBQ Bean burgers. buy here

  • Olive oil

  • Avocado

  • Your favourite BBQ sauce to serve

For the mash:

  • 2 to 5 teaspoons almond butter, or peanut if you prefer

  • 2 small/medium sweet potatoes, depending on how hungry you are! You can substitute for butternut squash.

  • Olive oil or dairy-free butter (optional)

  • Salt and pepper

For the slaw:

  • Half a small red cabbage (you can mix it up and add white cabbage too if you like)

  • One large carrot or 2 small-medium carrots

  • 1 apple

  • 2 tbsp extra virgin olive oil

  • 1-2 tbsp apple cider vinegar, to taste

  • 1-2 tbsp maple syrup or agave

  • 1 tbsp fresh lime or lemon juice

  • A dash or two of cayenne pepper or paprika

  • Salt and pepper

Optional toppings: anything you want! There’s no rules here. But we recommend jalapeños, vegan cheese (if that’s your thing) or even baked beans! Get creative!


Note: If you are making your own almond butter, make sure you have done so before you start this recipe! Unless you are a multitasker extraordinaire that is...

Ok, let's begin!

  1.  Start off by peeling the sweet potatoes, chopping them into roast potato-sized pieces, and chucking them in a pan (with a pinch of salt) to boil until they are soft.

    Meanwhile, let’s get the slaw ready!


  2. Shred your cabbage, peel your carrots and the apple, and pop them altogether in a nice large mixing bowl. Now into the same bowl, add the rest of the slaw ingredients and stir to combine it all nicely! Cover with cling film or foil and set aside somewhere nice and cool.


  3. Once your potatoes are nice and soft, drain the water from the pan, and begin to mash them (We’ve also found this to be an effective stress reliever, so be as aggressive as you need).  Add the salt and pepper as you go, any butter or oil you wish to use, and also the almond butter to taste. Make sure you start off with only a small amount of almond butter- it is possible to go overboard here...

    Pro tip: the less you use now, the more you get eat out of the jar with a spoon later.

    Your mash is ready when it’s nice and creamy.

    Now pop your two BBQ Bean patties in a pan on a high heat with a little olive oil, and cook each side for roughly 2-3 minutes, getting them nice and crispy (believe us, it makes the flavour even better).


  4. While these are cooking, slice up an avocado so it’s looking all nice and instagram worthy, if that’s your thing! Or if, like us you become a little touchy when you’re hungry, then feel free to just spoon that thing straight into your bowl and cut out the fancy stuff!

    Now your burgers should be ready! All that’s left to do is plate up!


  5. There’s not really any science to this- just place the burger into your bowl together with the mash, slaw and avocado any which way, spritz it with a little salt and pepper and a nice generous dollop of BBQ sauce and hey presto!
